Les Quatre Cépages

Les Quatre Cépages is a white dry, IGP Côtes de Gascogne. In Gascogne, our white grape varieties are: Colombard, Ugni-Blanc, Sauvignon and Gros-Manseng. All these grapes are different but complementary: these are my musketeers !

Tasting notes
  • Nose : Citruses, boxwood, exotic fruits, white fruits.
  • Palate : lively attacks, aromatic persistence.
  • Colour : pale yellow, almost colourless.
ABV

11,5%

  • Colombard, Ugni-Blanc, Sauvignon, et Gros–manseng.
Food and Wine Pairings

Our « Quatre Cépages » should be drunk at the aperitive, will go very well with white meats, soft cheeses and of course fishes
and seafood.

75 cl green bottle and 3L BIB

Le Noisette

 

Gros Manseng is our sweetest grape variety & also the one which we harvest the latest. Off-season is generally very beautiful in Gascogne: this is the “Summer of the St-Martin”. The autumnal sun allows our Gros-Manseng to fully ripen and to gorge themselves in sugar.

To keep its sweet character, we stop fermentation by cooling the wine at the desired time. The wine is then quickly extracted and rests on its fine lees at low temperature.

Tasting Notes
  • Nose : very typical from Gros-Manseng with citrus, quince jam, gingerbread and pear…
  • Palate : lively & wide start, modest sweetness thanks to a good balance between acidity and sugar.
  • Colour : light straw yellow with hints of green typical from Manseng.

Food and Wine Pairings

Our Noisette will be perfect at the aperitive, with some Foie Gras, delicatessen… but also with veined cheeses or hard
cheeses such as comté and of course with fruits desserts.
Should be served at 11°

Conditionning

75 cl white bottle only.

Le Rosé

Our rosé is a blend of Merlot & Cabernet Sauvignon from our « Sables Fauves », our typical sandy soils. This wine will go perfectly with your tapas !

Fermentation temperature is controlled to enhance aromatic expression from the grape varieties. After fermentation, “Le Rosé” is aged on its fine lees and then maintained at a low temperature.

  • Palate : lively attack, good aromatic persistence.
  • Colour : salmon pink

The aperitive is the perfect moment to taste “Le Rosé” but will go perfectly with your festive moments and tapas.
Should be drink at around 9°C.

Le Bétoulin

« Le Bétoulin » is produced in the same way as our white wines: fruity and refreshing.

His name comes from a plot in the estate. To enhance this freshness during winemaking, we frequently pump over under controlled temperature and then make a moderate maceration. This wine is aged in tanks and barrels, with a low ABV of 12,5%.

  • Palate: fruity and light wine with a small presence of tannins. Should be drunk while young.

Anima Sana

This is our frizzante wine, born from a meeting with a German friend who helped me to produce what I always dreamt
about… a wine nose, Gascogne aromas, with light bubbles.

To produce environmentally friendly products is our ethics. This is why we named our frizzante cuvée: Anima Sana (Sain mind).

  • Palate : lively attack, fine bubbles which line the palate

Should be served at 8° with your festive moments. This is a brut frizzante wine which goes very well with savoury and sweet
dishes.

sparkling !

Autumn on Pajot

Harvest 2020

Harvest 2020 has started very early this year – 14.08.20 🍇🍇🍇 Never seen before! The climat is changing, we try to adapt to it.

The last variety will be the Gros Manseng which matures late and is our sweetest grape variety. You can find it in our sweet wine “Le Noisette” but also in the assembly of our dry white wine “Les Quatre Cépages” and in our sparkling wine “L’Anima Sana”.

Floc Blanc

« Floc de Gascogne » (bunch of flowers in Occitan) is a subtle blend between young Armagnac maintained in stainless steel tanks & fresh grape juice.

A six-month period is required to obtain the perfect blend. “Floc de Gascogne” is not aged in oak barrels, which allows it to
keep its fruity & refreshing aromas.

Perfect for the aperitive.

Distillation of our white wine (100 % Ugni blanc) : that’s how white wine becomes Armagnac. After, we put it in barrels and a few years later, it will be ready !
